After breaking away from her position at two small-animal hospitals to start her own exotic practice, Dr. Laurie Hess knew she had a challenge ahead. She converted a retail shop into the Veterinary Center for Birds and Exotics and wondered whether clients would follow her. As it turned out, clients in the Bedford Hills, N.Y., area were knocking on her new door from day one.
